Method
Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, ensuring the sides and bottom are fully coated.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
Mixing the Batter
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Then mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined.
- Gently fold the mashed blackberries into the batter.
Baking
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Making the Frosting
- In a large bowl, beat together the softened butter and cream cheese until smooth and creamy, about 2-3 minutes.
- Gradually add powdered sugar, one cup at a time, mixing well after each addition until the frosting is thick and smooth.
- Mix in the blackberry puree and vanilla extract until fully combined.
Assembling the Cake
- Once the cakes are completely cool, place one layer on a serving plate or cake stand. Spread a thick layer of the frosting on top.
- Place the second cake layer on top and frost the entire cake with the remaining frosting.
- Garnish with fresh blackberries and serve immediately, or refrigerate until ready to serve.

Notes
For best results, use room temperature ingredients for the batter and frosting. Cool the cakes fully before frosting to prevent melting.
