A no-bake dessert pie inspired by the iconic Shamrock Shake, featuring a refreshing minty filling and a crunchy graham cracker crust, perfect for St. Patrick’s Day or any occasion.

Prepare the Crust
- Grease a 9-inch pie dish with butter or shortening and set aside.
- Place the graham crackers and brown sugar in a food processor and blend until fine crumbs form.
- Gradually pour in the melted butter while the food processor is running on low until the crumbs stick together.
- Press the crumb mixture firmly into the bottom and sides of the pie dish.
- Freeze for 15-20 minutes until the crust is firm.
Make the Filling
- In a large bowl, whisk together the cold milk, green food coloring, and mint extract until evenly combined.
- Add the vanilla pudding mix and whisk until the mixture thickens (about 2 minutes).
- Let the pudding rest for 5 minutes to set further.
- Gently fold in the whipped topping until the filling is smooth and creamy.
Assemble the Pie
- Spoon the filling into the prepared crust and smooth the top with a spatula.
- Place the pie in the freezer for at least 6 hours or until the filling is completely set.
