Autumn Embrace Dulce de Leche Cake

As the leaves start to change in early September, it’s a perfect time to bake something that reflects the rich, comforting flavors of fall. This Dulce de Leche Cake, infused with a creamy caramel filling, is like a cozy, sweet hug. Each layer is soaked in a milky syrup, intertwining harmoniously with the lush dulce de leche frosting, providing an irresistible treat for any autumn gathering.

Ingredients
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, at room temperature
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup whole milk
– 1 cup dulce de leche, for filling
– 1 cup heavy cream
– 2 tablespoons confectioners’ sugar
– 1 teaspoon vanilla extract
– Additional dulce de leche for drizzling

Directions
1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch cake pans.
2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
3. In a large mixing bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in 1 teaspoon vanilla extract.
4. Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow cakes to cool in pans for 10 minutes. Then turn out onto wire racks to cool completely.
6. For the frosting, whip the heavy cream, confectioners’ sugar, and 1 teaspoon vanilla extract until stiff peaks form. Gently fold in the dulce de leche until completely integrated.
7. To assemble the cake, place one layer on your serving plate and spread with half of the dulce de leche. Top with the second layer and cover the entire cake with the dulce de leche whipped cream.
8. Drizzle additional dulce de leche over the top and let it drip down the sides.
9. Chill for at least 1 hour before serving to set the frosting.
