Preparation
- Preheat your oven to 220°C (425°F) and line a baking tray with parchment paper.
- In a large mixing bowl, combine the self-raising flour, pumpkin puree, and cream. Stir until just combined.
- Lightly flour a clean surface and turn the dough out onto it. Gently knead the dough a few times until smooth.
- Pat the dough into a round about 2 cm (3/4 inch) thick. Use a floured cookie cutter (or a glass) to cut out rounds and place them on the prepared baking tray.
Baking
- Bake for 12-15 minutes, or until the scones are golden brown and puffed up.
- Remove from the oven and allow to cool slightly on a wire rack before serving.

For optimal results, don’t overmix the dough. You can brush the tops with a little extra cream before baking for a golden finish. If your kitchen is warm, refrigerate the dough for 10 minutes before cutting.
