Ingredients
  

  • 1 cup fresh ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 baguette sliced into 1/2-inch thick pieces
  • 2 tablespoons olive oil
  • Fresh fruit figs, berries, or sliced peaches
  • Fresh herbs basil or mint
  • Cracked black pepper optional

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Slice the baguette into 1/2-inch thick pieces. Place on the baking sheet and brush both sides with olive oil.
  • Toast the crostini in the oven for 8-10 minutes, or until golden and crispy. Remove and cool slightly.
  • In a medium bowl, whip together the ricotta, honey, vanilla extract, and sea salt until smooth and creamy.
  • Spread the whipped ricotta evenly over each crostini.
  • Top with fresh fruit slices and drizzle with additional honey.
  • Garnish with fresh herbs and optional cracked black pepper. Serve immediately.

Notes

Use fresh ricotta for the best texture.
Swap ricotta for mascarpone, goat cheese, or cream cheese if desired.
Seasonal fruits like figs, berries, or peaches work well; feel free to experiment.
For a vegan version, substitute ricotta with plant-based ricotta and use maple syrup instead of honey.
Store crostini separately from the ricotta and fruit if making ahead.
