Ingredients
  

  • Crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter melted
  • Cheesecake Filling:
  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • Peach Layer:
  • 4 cups sliced fresh peaches
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • ½ tsp ground cinnamon
  • Cobbler Topping:
  • ¼ cup all-purpose flour
  • ¼ cup rolled oats
  • ¼ cup packed brown sugar
  • ¼ cup unsalted butter melted

Instructions
 

  • Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  • Prepare the crust: Mix graham cracker crumbs, granulated sugar, and melted butter in a bowl until moistened. Press the mixture into the bottom of the pan and set aside.
  • Make the cheesecake filling: Beat softened cream cheese until smooth. Add sugar and mix well. Beat in eggs one at a time, then mix in vanilla and sour cream until just combined. Pour the filling over the crust and smooth the top.
  • Prepare the peach layer: Toss sliced peaches with sugar, lemon juice, and cinnamon. Arrange the peaches evenly on top of the cheesecake layer.
  • Make the cobbler topping: Mix flour, oats, brown sugar, and melted butter in a bowl until crumbly. Sprinkle the topping over the peaches.
  • Bake for 60–70 minutes, or until the center is set but slightly jiggly.
  • Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • Carefully remove the springform pan sides before serving. Slice and enjoy!

Notes

Use fresh peaches for the best flavor, but canned or frozen peaches can be substituted.
Allow all ingredients to reach room temperature for a smoother batter.
Overnight chilling is highly recommended for optimal flavor and texture.
