Ingredients
  

  • For the Crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp butter melted
  • For the Cheesecake Filling:
  • 2 cups fresh or frozen berries blueberries, strawberries, raspberries, etc.
  • 1 box 4 servings strawberry-flavored gelatin
  • 1 package 7g unflavored gelatin
  • 1 cup boiling water
  • 1 package 8 oz cream cheese, softened
  • cup icing sugar
  • ¼ tsp vanilla extract
  • 2 cups whipping cream whipped to stiff peaks
  • For Garnish Optional:
  • Additional fresh berries
  • Whipped cream
  • Mint leaves or chocolate shavings

Instructions
 

  • Prepare the Crust:
  • In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined.
  • Press the mixture into the bottom of a 9-inch springform pan. Refrigerate for 20 minutes.
  • Make the Gelatin Mixture:
  • Dissolve strawberry-flavored and unflavored gelatin in boiling water. Stir until completely dissolved and let it cool to room temperature.
  • Prepare the Cream Cheese Filling:
  • In a large bowl, beat softened cream cheese with icing sugar and vanilla extract until smooth.
  • Slowly fold in the cooled gelatin mixture.
  • Add Whipped Cream and Berries:
  • Gently fold in whipped cream and berries, ensuring even distribution.
  • Assemble the Cheesecake:
  • Pour the filling over the prepared crust, spreading evenly.
  • Refrigerate for at least 4 hours or until set.
  • Garnish and Serve:
  • Decorate with fresh berries, whipped cream, mint leaves, or chocolate shavings. Serve chilled.

Notes

Swap graham crackers with Oreos or digestive biscuits for a different crust flavor.
Use cherries or blackberries for variation in the filling.
Ensure the gelatin mixture cools completely before mixing with cream cheese to avoid lumps.
