Ingredients
  

  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breasts, diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 1 cup baby spinach chopped
  • 1 lemon juiced and zested
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Grated Parmesan cheese optional, for serving

  • Large pot or Dutch oven
  • Cutting board and sharp knife
  • Citrus zester
  • Ladle for serving

Instructions
 

  • Sauté the Chicken
  • Heat olive oil in a large pot over medium heat. Add diced chicken and cook for 5-7 minutes until browned on all sides. Remove and set aside if desired for easier layering later, but this step is optional!
  • Cook the Aromatics
  • To the same pot, add diced onion and minced garlic. Cook for 2-3 minutes until softened and fragrant.
  • Build the Base
  • Pour in chicken broth, and add orzo, thyme, basil, salt, and pepper. Stir well and bring the mixture to a boil.
  • Simmer to Perfection
  • Once boiling, reduce the heat to a gentle simmer. Let the soup cook for 10-12 minutes, or until the orzo is tender and the chicken is fully cooked through.
  • Add Freshness
  • Stir in chopped spinach, lemon juice, and lemon zest. Cook for an additional 2-3 minutes until the spinach is wilted and the flavors meld together.
  • Serve & Garnish
  • Ladle the soup into bowls and garnish with fresh parsley. Add a sprinkle of grated Parmesan cheese if desired.
