Colander to drain tortellini
- For the Steak Bites
- 1 lb sirloin steak cut into bite-sized pieces
- Salt & black pepper to taste
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic minced
- For the Alfredo Tortellini
- 9 oz refrigerated cheese tortellini
- 2 tbsp butter
- 1½ cups heavy cream
- ¾ cup grated Parmesan cheese
- ¼ tsp garlic powder
- Salt & pepper to taste
- Optional: Chopped parsley or extra Parmesan for garnish
Cook the Tortellini:
Boil salted water and cook the tortellini according to the package instructions (about 3–5 minutes). Drain and set aside.
Sear the Steak Bites:
Season steak with salt and pepper. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear the steak for 2–3 minutes per side, until browned. Add minced garlic during the last 30 seconds. Remove steak and keep warm.
Make the Alfredo Sauce:
In the same skillet, melt remaining butter over medium heat. Stir in heavy cream and bring to a simmer. Add garlic powder and Parmesan cheese, stirring until smooth. Season with salt and pepper to taste.
Combine & Serve:
Add tortellini to the Alfredo sauce and toss to coat. Return steak to the skillet and gently fold everything together. Garnish with parsley and extra Parmesan before serving.
For a lighter version, swap the sirloin for chicken or use a dairy-free cream and Parmesan for a vegan alternative.
You can add veggies like spinach, mushrooms, or peas to the sauce for extra flavor.
