Ingredients
  

  • For the Crust:
  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • For the Cheesecake Filling:
  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • For the Cherry Topping:
  • 1 cup cherry pie filling
  • For Garnish:
  • Fresh cherries
  • Whipped cream

Instructions
 

  • Prepare the Crust:
  • Preheat oven to 325°F (160°C). Mix graham cracker crumbs and melted butter. Press into a 9-inch springform pan. Bake for 8–10 minutes until golden. Let cool.
  • Make the Cheesecake Filling:
  • In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, mixing after each. Stir in sour cream and heavy cream until fully combined.
  • Assemble the Cheesecake:
  • Pour half the filling into the crust, spread half the cherry pie filling on top. Add the remaining filling, topping with the rest of the cherries. Swirl the filling with a knife for a marbled effect.
  • Bake the Cheesecake:
  • Bake for 50–60 minutes, until the edges are set, and the center is slightly jiggly. Cool completely on a wire rack. Chill in the refrigerator for at least 4 hours (overnight for best results).
  • Garnish and Serve:
  • Garnish with fresh cherries and whipped cream before serving.

Notes

You can swap the graham cracker crust for Oreos or use almond flour for a gluten-free version.
For topping, fresh berries, homemade fruit compote, or lemon zest can be great variations.
Ensure cream cheese is at room temperature for a smooth filling.
