Ingredients
  

  • For the Cake:
  • 4 large eggs separated
  • ¾ cup granulated sugar divided
  • 1 teaspoon vanilla extract
  • ¼ cup milk
  • ¾ cup all-purpose flour
  • ¼ teaspoon salt
  • Pastel-colored food gel pink, yellow, blue, green, etc.
  • Powdered sugar for dusting
  • For the Filling:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • For Decoration:

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a 10x15-inch jelly roll pan with parchment paper.
  • In a large bowl, beat egg yolks and ½ cup granulated sugar until creamy and pale. Add vanilla extract and milk, mixing until smooth.
  • Sift in the flour and salt, gently folding it into the yolk mixture until combined.
  • In a separate bowl, beat egg whites until soft peaks form. Gradually add the remaining ¼ cup sugar and continue beating until stiff peaks form.
  • Gently fold the egg whites into the yolk mixture in batches, being careful not to deflate the batter.
  • Divide the batter into separate bowls and add pastel-colored food gels to each.
  • Spoon the colored batters randomly into the prepared pan and swirl with a toothpick to create a marbled effect.
  • Bake for 10–12 minutes or until the cake is springy to the touch.
  • Dust a clean kitchen towel with powdered sugar. Turn the warm cake onto the towel, peel off the parchment paper, and roll it tightly from a short edge using the towel. Let it cool completely.
  • In a chilled bowl, whip the heavy cream until soft peaks form. Add powdered sugar and vanilla extract, then whip until stiff peaks form.
  • Unroll the cooled cake, spread the whipped cream evenly over the surface, and reroll the cake (without the towel).
  • Trim the edges and decorate with Easter Peeps. Chill for at least 1 hour before slicing and serving.

Notes

For a simpler filling, use store-bought whipped topping.
Experiment with different food gel colors to create unique designs.
Freeze leftovers wrapped tightly in plastic wrap for up to one month.
