- For the Cookies:
- 1 cup dairy-free butter softened
- 1 cup granulated sugar
- 1 large egg or 1 tablespoon flaxseed meal + 3 tablespoons water for vegan option
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour or 1:1 gluten-free flour blend
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
In a large bowl, cream together the softened dairy-free butter and granulated sugar until light and fluffy.
Add the egg (or flaxseed mixture) and vanilla extract to the butter-sugar mixture, mixing until fully combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture, stirring until a dough forms.
Lightly flour a clean surface and roll out the dough to about 1/4 inch thickness. Use cookie cutters to create desired shapes.
Place the shaped cookies onto the prepared baking sheets, leaving a small gap between each.
Bake in the preheated oven for 8–10 minutes, or until the edges are just lightly golden.
Allow the cookies to cool on the baking sheet for 2–3 minutes before transferring them to a wire rack to cool completely.
For a vegan version, use an egg replacer like flaxseed meal and water.
To enhance the flavor, add a pinch of cinnamon or almond extract.
Store cookies in an airtight container with a slice of bread to maintain softness.
