Ingredients

  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling

  • 12 egg roll wrappers
  • 1 large egg beaten (for sealing)
  • Vegetable oil for frying

Instructions
 

  • Prepare the Filling:
  • In a medium bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Assemble the Egg Rolls:
  • Lay out an egg roll wrapper in a diamond shape with one corner facing you. Spoon 2 tablespoons of the cream cheese mixture onto the center of the wrapper, then add 1 tablespoon of cherry pie filling on top.
  • Fold the Wrapper:
  • Fold the bottom corner of the wrapper over the filling, fold in the sides, and roll up tightly. Seal the edges with a brush of the beaten egg.
  • Heat the Oil:
  • Heat vegetable oil in a deep skillet over medium heat until hot but not smoking.
  • Fry the Egg Rolls:
  • Fry the egg rolls in batches for 2-3 minutes on each side, until golden brown and crispy. Remove and drain on paper towels.
  • Serve:
  • Dust the egg rolls with powdered sugar and serve warm.

Notes

For a healthier option, air fry the egg rolls at 400°F for 8-10 minutes, flipping halfway through.
You can swap cherry pie filling with strawberry, blueberry, or apple pie filling for different flavors.
