  • 1 cup unsalted butter
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs

  • 1/2 teaspoon salt
  • 2 cups old-fashioned rolled oats
  • 1 cup butterscotch chips
  • 1 cup toffee bits

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a medium saucepan over medium heat, melt the butter. Stir constantly until it turns golden brown and releases a nutty aroma. Remove from heat and let it cool slightly.
  • In a large mixing bowl, combine the brown butter, brown sugar, and granulated sugar. Mix well.
  • Add the eggs and vanilla extract, then beat until smooth and creamy.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the oats, butterscotch chips, and toffee bits.
  • Transfer the dough to an ovenproof skillet, spreading it evenly.
  • Bake for 20-25 minutes or until the edges are golden and the center is set but soft.
  • Let cool for a few minutes before serving—best served warm!

Notes

For a variation, swap out the butterscotch chips with chocolate chips.
You can add chopped nuts like pecans or walnuts for added texture.
Be sure not to overbake to maintain the cookie's gooey center.
