Ingredients

  • Crust
  • 7 tablespoons unsalted butter melted
  • 1 1/2 cups graham cracker crumbs about 9 whole crackers
  • 3 tablespoons granulated sugar
  • Filling
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 container Cool Whip 8 ounces
  • 1 can cherry pie filling 21 ounces

Instructions

  • . Make the Graham Cracker Crust
  • In a medium bowl, melt the butter in the microwave (about 30 seconds).
  • Add the graham cracker crumbs and granulated sugar to the melted butter, stirring until well combined.
  • Press the mixture firmly into the bottom of an 8x8-inch baking dish, creating an even layer. Set aside.
  • Prepare the Cream Cheese Filling
  • In a large bowl, beat the softened cream cheese until smooth and free of lumps.
  • Add the powdered sugar and vanilla extract, mixing until fully combined and smooth.
  • Gently fold in the Cool Whip, mixing until everything is just combined. Be careful not to overmix, as this can make the filling less fluffy.
  • Assemble the Cherry Delight
  • Spread the cream cheese filling evenly over the graham cracker crust using a spoon or offset spatula.
  • Spoon the cherry pie filling over the top of the cream cheese layer, spreading it out evenly.
  • Chill and Serve
  • Cover and refrigerate for at least 2 hours (overnight is even better!) to allow the layers to set and flavors to meld.
  • Slice and serve chilled, straight from the fridge.

Tips for Making the Best Cherry Delight
Softening the Cream Cheese: Ensure the cream cheese is fully softened to avoid lumps in the filling.
Chilling Time: For best results, let the dessert chill overnight. This helps the layers set firmly and enhances the flavor.
Alternative Toppings: Try blueberry, strawberry, or apple pie filling for a delicious twist!
