Preparation
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans, or line them with parchment paper for easy removal.
 - In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
 - In a large mixing bowl, cream the butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 2–3 minutes.
 - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
 - With the mixer on low speed, alternate adding the dry ingredient mixture and buttermilk, beginning and ending with dry ingredients.
 - Gently fold in the diced apples using a spatula.

Baking
- Divide the batter evenly among the prepared cake pans and bake for 25–30 minutes, or until a toothpick comes out clean.
 - Let the cakes cool in their pans for 10 minutes, then transfer them to a wire rack to cool completely.

Assembly
- Once cooled, place one cake layer on a serving platter. Spread a generous layer of caramel sauce over the top.
 - Repeat with the second layer, and top with the final layer. Drizzle more caramel sauce over the top.
