Cilantro-Lime Rice

  • 1 cup jasmine or basmati rice
  • 1 1/4 cups water
  • 1 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste

Bowl Toppings

  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh, canned, or frozen)
  • 1/4 cup red onion, diced
  • 1/4 cup tomato, diced
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for garnish

Chipotle Mayo

  • 1/4 cup mayonnaise
  • 12 tsp chipotle sauce (adjust for spice)
  • 1 tsp lime juice

Instructions

1. Marinate the Shrimp

In a bowl, combine the olive oil, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper. Toss the shrimp in this marinade to coat well and let it sit for 10-15 minutes to absorb all those flavors.

2. Prepare the Cilantro-Lime Rice

Rinse the rice, then combine it with water in a medium saucepan. Bring to a boil, cover, and reduce to a simmer. Cook for about 15 minutes, or until tender. Fluff the rice with a fork, then stir in lime juice, chopped cilantro, and salt to taste.

3. Make the Corn Salsa

In a bowl, mix the corn, diced red onion, and diced tomato. Add a squeeze of lime juice and a pinch of salt for a simple, refreshing salsa.

4. Cook the Shrimp
