Ingredients

  • ooked Chicken: 1 lb, shredded (a great use for leftover chicken or rotisserie chicken)
  • Fresh Spinach: 1 cup, chopped (adds freshness and color)
  • Cooked Bacon: 1 cup, crumbled (for that crispy, smoky flavor)
  • Cream Cheese: 1 cup, softened (helps hold everything together and adds creaminess)
  • Cheddar Cheese: 1 cup, shredded (melts beautifully and adds a sharp flavor)
  • Garlic Powder: 1 tsp (enhances the savory flavor)
  • Onion Powder: 1 tsp (adds a touch of sweetness and depth)
  • Salt & Black Pepper: ½ tsp each (season to taste)
  • Tortilla or Flatbread: 1 large (for wrapping up all that delicious filling)
  • Olive Oil: 2 tbsp (for brushing the pinwheels before baking)

Instructions

1. Preheat the Oven

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. This ensures the pinwheels won’t stick and helps them crisp up nicely.

2. Prepare the Filling

In a large bowl, combine the shredded chicken, chopped spinach, crumbled bacon, softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix everything well until all the ingredients are evenly incorporated and the mixture is creamy.

3. Assemble the Pinwheels

Lay the tortilla or flatbread flat on a clean surface. Spread the chicken mixture evenly over the entire surface of the tortilla, making sure to reach the edges for full coverage.

4. Roll and Slice

Roll the tortilla tightly from one end to the other to form a log. Using a sharp knife, slice the log into 1-inch pinwheels. You should get approximately 12 pinwheels from one large tortilla.

5. Arrange and Bake

Place the pinwheels cut side down on the prepared baking sheet. Brush the tops with olive oil for a golden, crispy finish. Bake for 15-20 minutes, or until the pinwheels are golden brown and heated through.

6. Serve Warm

Once they’re out of the oven, let the pinwheels cool slightly. Serve them warm as a delicious snack, appetizer, or even a light meal!
