Ingredients

Scale
  • 3 cups corn kernels (fresh, frozen, or canned)
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup diced green chiles (canned) or fresh jalapeños (adjust to taste)
  • 1/2 cup diced tomatoes (optional, for added freshness)
  • 1/4 cup diced red onion
  • 1 clove garlic, minced
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper, to taste
  • 1/2 tsp chili powder
  • Juice of 1/2 lime (for a tangy kick)

Instructions

1. Prepare the Base

In a large mixing bowl, combine the sour cream and mayonnaise. Season with salt, pepper, and chili powder, mixing until the spices are well incorporated.

2. Mix in the Goodies

Add the corn, shredded cheese, diced green chiles or jalapeños, tomatoes (if using), red onion, and minced garlic. Stir until all ingredients are evenly coated in the creamy mixture.

3. Add Lime and Cilantro

Squeeze in the fresh lime juice and mix in the chopped cilantro. The lime and cilantro add a pop of brightness to the dip, balancing out the richness of the cheese and mayonnaise.

4. Chill and Serve

Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve cold with tortilla chips, fresh veggies, or even on top of tacos for a fun twist!
