Ingredients

Scale
  • 1 cup vanilla wafer crumbs
  • 1 cup powdered sugar, plus extra for rolling
  • 1 cup chopped pecans or walnuts (optional)
  • 1/2 cup dark rum
  • 1/4 cup eggnog
  • 1 tsp vanilla extract
  • 1/2 tsp ground nutmeg (plus extra for garnish)

Instructions

Step 1: Combine Ingredients

In a large bowl, mix together the vanilla wafer crumbs, powdered sugar, and chopped nuts (if using).

In a separate bowl, whisk together the dark rum, eggnog, vanilla extract, and ground nutmeg.

Step 2: Mix Everything Together

Pour the wet ingredients into the dry ingredients. Stir until well combined. The mixture should be moist and hold together when pressed.

Step 3: Chill the Mixture

Cover the bowl with plastic wrap and refrigerate for 1-2 hours, or until the mixture is firm enough to handle.

Step 4: Form the Balls

Once the mixture is chilled, scoop out about 1 tablespoon and roll it into a ball. Place each ball on a baking sheet lined with parchment paper, and repeat with the remaining mixture.

Step 5: Roll in Sugar

Roll each ball in powdered sugar to coat. For a festive touch, sprinkle a little extra nutmeg on top of each ball.

Step 6: Chill Again

Place the coated rum balls back in the fridge for at least 30 minutes before serving to allow them to firm up.

Step 7: Serve

Enjoy your Eggnog Rum Balls chilled or at room temperature! Store in an airtight container in the fridge for up to one week.
