  • 4 boneless, skinless chicken breasts
  • Salt and pepper (to taste)
  • 1/2 cup all-purpose flour (for dredging)
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup capers, drained
  • 1 can (14 oz) artichoke hearts, drained and halved
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish)

Instructions

Follow these steps to make your new favorite chicken dish!

Step 1: Prepare the Chicken

  1. Season the chicken breasts with salt and pepper.
  2. Dredge each piece of chicken in flour, shaking off the excess.

Step 2: Sear the Chicken

  1. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium-high heat.
  2. Add the chicken breasts to the skillet, cooking for about 3-4 minutes per side, until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside on a plate.

Step 3: Make the Sauce

  1. In the same skillet, pour in the chicken broth, lemon juice, and capers.
  2. Bring the sauce to a simmer, scraping up any browned bits from the bottom for extra flavor.
  3. Let it cook for about 2-3 minutes to thicken slightly.

Step 4: Add Artichokes

  1. Add the artichoke hearts to the skillet and cook for another 2 minutes until heated through.

Step 5: Finish the Dish

  1. Return the chicken to the skillet, spooning the sauce over the top.
  2. Let it cook for an additional minute to ensure the chicken absorbs the flavors.

Step 6: Serve

Plate the chicken and drizzle the sauce over each serving. Garnish with fresh parsley and lemon slices for a fresh, vibrant look.
